If you like to make several different kinds of cookies during the holidays, here’s a tip that is sure to make your holiday baking easier. I spend a couple weekends before the rush of the holidays (sometimes as early as late October) mixing up all the cookie dough. Then I freeze it in large freezer bags (be sure that you use freezer bags since they are heavier and help the dough stay fresh). When I’m ready to bake, I just put the dough in the refrigerator the night before to defrost. This way I can bake without having to bring out all of my ingredients.
